Freelander 1.8 petrol head gasket

Right then, I have decided, well the finances have decided, that I will be doing the head gasket on my freebie myself..... I put a bottle of K-Seal in it just to keep it going through the bad weather before I put my Laguna back on the road, which BTW seems to have stopped it using water.
Anyway, my question is this, I have read that i will have to get the head skimmed, which we can do at my work, but I am usure of how much to take off..... Is it that I am taking enough off to make sure that the head is completely flat or as I am fitting the modified 2 layer steel gasket I have to take more off to allow for the modified gasket?????
And, would it be advisable to fit the modified thermostat while doing this or just replace the existing thermostat?

Any thoughts, or advice would be appriciated guys.
